I've used the method of heating the bare hub in a 350 or so degree oven, at which point the interference fit releases enough so that a rap on a piece of wood usually dislodges the race. Replacement involves the same heating of the shell, after which the new races, having spent the night in the freezer, drop right in. My only concern with doing this cold would be the possibility of broaching materiel out of the hub shell, thus compromising the interference fit, especially if the new race didn't enter squarely. Perhaps not an issue; how often is this done in the life of a hub? But a small lip of alloy ploughed up by a cockeyed race could keep it from seating squarely. I've also used this method many times to remove and install ball and roller races in motorcycle gearboxes and crankcases, and got the idea to try it on a Campy Pista hub as a result of this experience.
