The 27 inch is fading into the sunset, but you can still get rims on special order. I was able to order a set of Sun CR 18's in 27 inch a while ago through my LBS. A wider touring rim, and they're polished silver to boot! Needed them for my old Paramount, which wouldn't reach a 700c rear wheel even with the Weinmann 750 brake. Harris Cyclery catalogs 27 inch rims if your local guy can't get them.

You can also watch eBay, 27 inch rims are still selling at a discount compared to 700c of comparable vintage.

The 27 inch tire situation is still okay, but who knows for how long?
