OK, I have selected different bars for two of my bikes, both mid-fifties British path racers and am trying to figure out the appropriate amount of the bars to tape.

What was done back 'in the day'?

I notice that pista bars seem to be most commonly taped more just near the end than road bars. What is the history or reasons for that?

Both these bikes (my 56 Carpenter and 55 Claud Butler) will have no rear brake and a removable front brake (using one of those nifty modern off-topic calipers that can be removed with retaping the bars). The brake will be mounted above the taped section.

FYI, the Carpenter can be seen at http://www.wooljersey.com/gallery/kanford/Carpenter/

and you can get to the Claud from there.

Thanks for your advice, suggestions, etc
