I am wondering if some of the undated Campy crank arms were service replacements.  I have a 1982 Gazelle that has an appropriately dated RH crank and an undated left.  It is possible of course that the undated crank is an older one that was fitted as a replacement, but its condition is so good, I am more inclined to think that it is a newer replacement.  Either way, I am not worried about it either -- bits break or get damaged and then get replaced with new or used parts.  I think that finding a single NOS undated crank in 2009 slightly supports the idea that service parts were undated..  If it started life as half of a pair, it is hard to understand why the right would have been fitted but not the left.  The logical thing to do if you break or damage one crank, and have a new pair of cranks, is to fit both the new cranks so that the single good crank remaining is used rather than new.

It does seem to be the case with cranks having missmatched date codes, some of mine are odd......something I'm not too worried about......though you have to be careful with the post 78 RH cranks matching up with the appropiate bracket and front gear.

I recently managed to find a NOS 177.5 strada LH crank to match a post 78 RH....the new LH is undated, so presumably pre 73?

The original owner swears that they have never been  changed or replaced and that the cranks are what was originally on it  when it was purchased new in Italy.
