If you want "old-fashioned" clinchers, there are more choices than there have been in a long time. You have Grand Bois with classic tread patterns and tan sidewalls in 25, 29 and 31 mm widths, plus a number of 650B offerings.

Challenge offers the Triathlon in 24.5 mm and the Parigi-Roubaix in 29 mm. Panaracer's Paselas aren't quite the classic look, but at least are inoffensive. There are a few others as well...
