Many of us have followed the advice of the inimitable Sheldon Brown and converted any old freewheel-style rear wheel we had around to fixed gear used. It's the only way I've ever done it, and I've done at least half a dozen for myself and a few more for friends and family, and they've all worked out just fine. It's much simpler than dealing with a track hub, which is often spaced for much narrower than you need for a road frame.
The only complicating issue is the installation of a lockring, but an old English BB lockring works just fine in most cases, and once you've ridden the thing up a few stout hills, the lockring will be superfluous, anyway.
