The different ride and handling qualities imparted by changing tire widths and types (tubulars/clinchers) was something I dismissed as relatively insignificant until this past year. I've been experimenting with different wheelsets on all my bikes and now realize that I previously had no idea of the substantial changes a seemingly simple tire width or construction might have on ride quality.
