I've done it even more easily - I first try adding a 3mm spacer to each side, which keeps the wheel centered. This only works if the extra 3mm on the right is sufficient for the FW to clear the chainstay when removing the wheel, but quite often it is. In this case you don't have to redish the wheel, and less dish is always good.

There's really no need to cannibalize a 6-speed hub, just get a 6mm spacer and add it to the right side of your 5-speed, and re-center the axle so there's 3mm less axle sticking out both sides. Many people have done this over the years and no one has ever reported a problem from it that I've heard of. I have several wheels like this myself.
