Three within city limits, one outside:
I'd say don't miss Il Vecchio, right on Lake Washington in the Leschi
neighborhood. There's always at least 2 or 3 nice bikes from our area of
interest; a 1949 Bianchi w/Paris-Roubaix derailleur comes to mind.

Recycled Cycles, in the U district, sells mostly used stuff as the name
implies, and always has some interesting bikes and parts. The coolest ones
are hanging from the ceiling and aren't for sale. I saw a late 50s Raleigh
Lenton Grand Prix for sale last time I was in, all original and in very good
condition, for maybe $400. My wife Laurie just bought a 1950 Raleigh lady's
roadster there in nearly perfect condition for about a hundred - it's sweet!

Bikesmith, in the Wallingford neighborhood, is tiny and doesn't always have
great vintage lightweights, but they're worth a visit. You might see
something wonderful, like Nelson Miller's Paris Galibier that was in being
worked on not too long ago. http://www.thebikesmith.com/
If you're willing to go outside of Seattle a bit, there's Kingston Classic
