To knock the cup race from a hubshell the tunnel through the hub needs to be bellmouthed so you can get a tool against the inner edge of the race. I have a homemade (I should say home-modified) tool I use. Campy hub races are easily removed and races are readily available.
Essentially the race is punched out from the opposite side. Modern Shimano hubshells (e.g. 8/9spd) don't have this facility, so I don't know how else one would remove the race. Maybe some crafty dremeling. You'd want two notches, roughly 180 degrees opposed, so you can progressively tap the race out fairly straight, something like removing a crown race from a fork. Lay the wheel, with the race to be removed racing down (all innards removed, of course), on a firm but malleable surface (I use wood). Use a fairly thin screwdriver (I have ground and filed a specific shape to the blade to facilitate reach and fit) to tap on the race. Usually only a few good knocks are needed.
80's vintage Shimano hubs I have had apart did have this bellmouth feature, so I'd guess earlier models would also. Regardless, I have never seen any source for Shimano cup races, except another hub. Maybe you could find a compatible model with a broken flange or similar to rob parts from.
