Steven, respectfully, I think this is just a bicycle framebuilder urban legend. Stainless is no harder to braze than anything else, and done well is extremely reliable. Like anything there is a certain procedure and I think this has come from a few builders that are experienced in brass brazing having difficulty adapting their technique to stainless, silver brazing work.

With regards to stainless steel droup-outs, they are notoriously unfriendly to brazing.
