Of course sewups would be most appropriate but next most desirous would be Mavic Module Es. They will not be an easy find though!! The one-of-the-other first-on-the-block narrow clincher rim would be the Rigida 13-19 (but not the same quality ...although not bad with a good builder!!)
Weinmann concaves are mostly welded and often lumpy at the weld area but you can check for this in advance and, as you already know, they can make up into a decent, reliable wheel and they were the hot cheese when first introduced! (OK, there are a few tire fit issues occasionally but not as bad as some think!)
I am not sure you are going to find that much noticeable weight diff if you stick with age appropriate rims. Keep your rims and use fat/ thin/ light tires & latex tubes and light butted spokes!
