I'd add Sam Braxton to that list. I think Braxton's Bike Shop is still open in Missoula, Montana. Bruce Gordon made some serious constructeur bikes in the days past. I think the problem that you're going to run into is that touring was never as popular as racing in the US. Riding all the way across France is couple week trip but across the US is a multi-month ordeal.
