Paul,

The ATAX stem Dan Kasha mentioned is quite nice and has a recessed allen head. For your bike which would have originally had a nutted stem, you may want to consider a "PIVO" or "PHILIPPE" stem. It is a bit more ornate and very in keeping with the character of your bike. On bars, look for "Guidionnes Philippe" as they made a sturdy aluminium bar with really wonderful engraving.
