With all this talk of brake centering, I still haven't seen anybody list the old shop trick of putting a wrench on the brake tightening nut and another on the centerbolt. Somewhat overtighten the brake tightening nut causing the pad to hit the rim on one side, and then balancing both wrenches, back off the tightening nut while "screwing in" the wrench on the outer centerbolt to back the whole caliper away from the rim, blipping the brake lever to make sure the brake pads are not touching either rim when the springs are at there neutral position. It doesn't always work, but it sure does most of the time. I've never had a set of Universals to work on but would expect similar results.
