I have done just that with a pair of MA 3s. I used a blowdryer to peel them off, and a nonaggressive solvent called "Oops" to remove any remaining adhesive. I laced them to 36 hole LF Campagnolo NR hubs for a winter rider. They are nice rims, and don't look too out of place on a not so nice vintage frame. They don't have a highly polished surface like a vintage rim, but I don't have to worry so much about the numerous potholes that come with winter and spring riding.
