Just to be explicit about the idea you expressed (below): the best way to feel the difference in handling between one bike and another is to ride one of them for 50 miles -- and then switch immediately to the other bike.

The ride acclimates your body to the ideosyncrasies of the first one, after which the nuances of the next bike stand out in sharp relief for a few minutes as your reflexes adapt.

Doesn't necessarily show which is better, but does allow you to notice the difference.
