I often ride 30mm tires on my road bike with cantilever brakes. I think anything wider would be overkill. My mountain bike is a 29'er which means it uses 700c rims. I have 2 inch tires on this bike which I guess is about 50mm. Rides nice on the road; however, I have raced it using 34mm tires.

While wider tires have less rolling resistance than narrow tires; the wider tires are less aero and aero almost always wins out over rolling resistance. Of all the factors affecting speed, rolling resistance is the least critical. And then weight becomes a problem although my 30mm tubulars are only 30 grams.
