If you check this picture, you see that bar tape, hoods, and cable housings were white:

Of course if you shellac the white cloth it won't be white anymore. As Peter Kohler pointed out you can get close to a match to the copper paint with enough shellac. The Bullseye Amber I used on my Peugeot comes close after 5 or 6 coats. email me off list, I can send a jpeg if you want.
