The simple solution to this conundrum is to build it up with whatever bits you can lay your hands on prior to restoration and try it out. If you are happy with the fit and feel after trying different stem lengths and/or saddle positions, go ahead and restore. If not, pass it on. As a matter of principle, I would say that it is pretty silly to restore any frame for personal use without trying it - making sure that it tracks properly and feels good.
