Sorry, we do tend to get balled up in our own stuff and think that someone else will answer. (Actually I wish sometimes we would get off the topics "...currently debated" Ha!)
Anyway, Carlton was often sold as a frameset and built up in the shop or by the customer so you really can use any Euro equipment from that era. Of course, many tiomes for reasons of economics and availability, many used as much British parts as available.
So GB brakes, Williams cranks, Benelux derailleurs were common. All depends upon how "fancy" the build was (read that as "costly") Of course at a certain point Campag was the top level but Simplex, Huret and Weinmann were always popular. No matter how popular they were, somehow I can't see using Mafac brakes but I may be wrong on that too!
And your other consideration is what you can actually find. Needless to say some components are going to be difficult-to-impossible to locate! For instance, forget finding Dunlop tires as they are pretty much gone with the wind. But pretty "correct" Michelins may still be found (clinchers in Mod "50" or "High speed" for instance) Those hubs you have sound like a good start.
