well . . . I'd have been the first to reply to Josh's question , except just before I could send in my reply , I was called away by major distractions .
there have now been several replies - the ones from Roy Drinkwater and Jerry Moos even specified the same pedals I'm recommending .
but , since my reply includes links to photos , I'm sending this in anyway .
Hi Josh ,
The easiest and quickest answer which springs to mind is ; a pair of Lyotard Model 23 Marcel Berthet "platform" pedals . According to one noted historian ( a certain Mr. Sheldon Brown ) these pedals are , "one of the most elegantly designed bicycle parts ever ."
Here is the address of that wonderful "Pedal Museum" , courtesy of Speedplay :

When you look through the collection of photos , be sure to use THEIR scroll-bar , to scroll across the collection . The right arrow on your keyboard is not the way to do it .
Those pedals came as standard equipment on the Road Racing Paramounts , of the early to middle 1960's . Here is the correct page from a 1963 Schwinn catalog ( thanks Bob Hufford! & Eric Amlie! ) showing those pedals on a 1963 Schwinn Paramount :

And here they are ( thanks Dale Brown! ) on the Classic Rendezvous web site :
