I have an off-the-shelf '72 Motoconfort tourer by Motobecanne. It's plain gauge Reynolds and has a 48/32 TA crank, Huret Allvit Luxe derailleurs, Mafac cantis, randonneur bars, Super Champion/Maillard Luxe Competition wheels, stainless fenders, proprietary racks front and rear and integrated lighting. It's not light (he understates), but it has a really nice all-day ride and is very stable. Maybe not for the randonneur/randonneuse/randonnette who could afford a bespoke touring bike but a nice all-in-one package for the common man and a blast wide open down a steep grade.
