Dia-Compe also made a nicely polished "Gran Compe" centerpull brake with recessed mounting; Trek spec'ed it on the first model year of the 720 touring bike.

You can also extend the threading on the original bolt with a sacrificial 6x1mm die (the chrome on the bolts can be pretty tough on cutting tools) and then trim it to the length you need for recessed mounting.
