Then or now? Then (late 70s for me), my list was similar to yours: no dust caps, no valve caps, white or black cotton tape wrapped from the stem out with the ends tucked behind Velox bar-end caps (a bit weighty for the racer-types, but I dig 'em anyway), 52-42 chainrings, straight-block Regina freewheel, that twisty thing with the toe straps.
Now, I go modern with cork tape wrapped the other way, allen crank bolts, still no valve caps, Velox bar-end caps if I use Ergo otherwise I use bar-end shifters (no STI!), clipless pedals (although the MKS Nuevo Keirin pedals are about the coolest quill pedals I've ever used bar none), and I fight the tide by continuing to use quill stems and threaded steerers. Unfortunately, there are no decent quill stems being distributed in the US any longer. So, I am left to import Nitto Pearls from Japan myself (my favorite quill alongside the now discontinued Salsa cro-mo SUL anyway) .
