Fred, I can sympathize with your dilemma but it may not be you or you age that has anything to do with a wheel being more difficult to true. At least in my experience (not a lot I am afraid) I have built up a few wheels and have had a lot of success in doing so. I sort of like to do it as it is very rewarding to do it yourself and have it turn out well. I do have to thank Steve Willis for tutelage but here is my point. I have run into some rims, 2 to be exact, that would not true no matter what I tried. They were defective in my opinion. I would get it almost there and then it would walk out on another side. If I fixed that side then another side walked out. I would take it all apart, start over and have the same results. Thinking that I was just loosing it I took another rim, built it up and trued it and all went well. You would be surprised how quickly you pick this talent up when you do it several times on one rim. Frustration is your enemy and a bad rim will frustrate you more than a line at the post office. Before you blame your advancing years, try another wheel and see how it goes.
