At Trek, I was fond of using a large heating tip for brazing -- you can get the whole joint evenly heated very quickly and as you say you can see the brass moving through the joint. You can even see it moving under the lugs as well, because the parts with brass under them are slightly cooler than the void areas -- it really helps in ensuring the joints are fully penetrated.
Since leaving Trek I haven't done this so much, mostly because the big heating tip works best with oxy-propane and now I use oxy-acetylene.
