I have a couple of touring framesets (within the CR timeline, of course!) with cantilever posts on the 27-inch standard. For "real world" tours I'm wanting to use 700c wheels (not yet built). This will create, I believe, a 4mm difference in the vertical orientation of the rims to the posts (and hence to the brake pads).
Before I go to the trouble of having the wheels built, how difficult will it be to adjust the canti brakes to strike the rim properly?
Specifically...
1) With a set of Shimano Deore XT cantilevers; and
2) With a set of Dia-Compe Gran-Compe cantilevers?
And will adjustment of the brakes create any difficult angles between the surface of the pads and the rim which may compromise stopping ability or create other problems?
I searched the archives and found only a couple of messages roughly on-point.
