One other option if going, gasp, clipless is to use Speedplay X-Series pedals. These pedals can be entered from either side. So, I have equipped tandems with standard (non-tandem-specific) cranks and then custom-ordered a set of 4 pedals from Speedplay. You will need 3 pedals with right-hand threads and one with left-hand threads.
