Ok, my time to chime in. Kone is on the road and Peter doesn't live here anymore.
I would first check out Cycle Analyst. Richard and Terry know what they are doing and they specialize in keeping your old iron running. They don't push upgrades on you if you don't need them. Now Richard has a bit of a reputation as being cranky. But let me say this. I brought a Holdsworth Path Racer to him several years back to be fitted out with a headset as well as some other parts. They hooked me up. Several weeks later I get a package in the mail from Richard with a note and a NOS Holdsworth cycling cap in all its orange glory. Terry worked at Masi in the early 80's I think and brother Baylis may know him. This is the kind of place that you can still drop a 6-pack off to say thanks. Some of their stuff in the parts cabinet is a bit over priced.
Vecchio's would be the next place I would recommend. I had brought some wheels in for a rebuild and there was a crack in one of the flanges. He offered me a hub out of his own collection at a very reasonable price.
Schwab is mail order and pretty much racing oriented. They do have some good people in the shop that will at least recognize that your steed is not in need of an upgrade. Wheat Ridge is ok, Turin is ok if you get to the right mechanic. Denver Spoke and Campus Cycles are decent.
Most of the decent shops around the area though are gone, replaced with shops that would love nothing better than kit your Colnago Super out with Ultegra or tell you to junk it for something lighter.
