You roll up the bills as tightly as possible, pack this roll in a jewelry box and lie to the post office, declaring that you're sending jewelry. Apparently, this is (or was) common practice for the people from 47th Street in New York, Ramat Gan, Antwerp and the various diamond centers of India.
Alternatively, you could also have your rebbe or guru assign an emissary to carry the cash for you but not many of these people are also familiar with the classic bicycle business.
I don't know if I would do this today, given the way mail is currently scrutinized. Also bear in mind that this was a situation in which vendors are accustomed to writing dummy receipts, etc. I know this isn't a satisfying answer but it's how business is (or was) conducted in certain realms.
