Some suggestions:
Saddle - Ideale (France), and there is also an outfit in Wisconsin, I think, who are making anotomic leather saddles, but these may be made elsewhere and then modified in USA.
Seatpost - Simplex (F), LaPrade (F), American Classic (USA, at least I think they're still made in here), Thompson (USA, though this is a modern design).
Brakes - There was a Scott brake made in USA that used a side pull scissor design.
