I never heard of a builder removing the internal pins.. Maybe someone has done this (for weight reduction purposes?) but that would be extremely unusual. If you don't see pins, there most likely never were pins. I did not use pins (except once)... I might say that most builders do not use pins to hold the joints in place but use jigs for this purpose... There arer many ways to build, differing techniques, all capable of yielding excellent results in skilled hands (this last is the most important aspect by far.)
