J.B. I'd like to second Curt's mention of One On One Bicycle Studio & Hiawatha Cyclery. http://hiawathacyclery.com
Hiawatha is a small shop but usually has 5-6 of co-owner Kevin
McAfee's collection of classic lightweights on display. The owners
host rides on the weekends, before the shop opens. Usually
Saturdays. They are posted on Jim's blog

Rydjor Bikes http://www.rydjor.com seems to be carrying on despite the recent passing of owner Dan Ulwelling. They are in Austin MN, about 45 miles SW of Rochester, and have a great collection.
One event you might consider would be the 3 Speed Tour of Lake Pepin http://www.3speedtour.com Machines range from 531 British customs with close ratio hubs to $5 garage sale Robin Hoods. If you don't have a 3 speed (actually 4 & 5 speed hubs are also allowed) several of us locals have extras. It's not uncommon for someone to fly in with their favorite Brooks saddle and borrow a bike for the event.
