You're right, you simply reverse the direction in order to remove the sprocket. I've been doing it this way for ages. It certainly beats skinning your knuckles on a slipping chainwhip! Anyway, the idea of the "rotafixa" is that it's tight enough that a lockring is not required - as such allowing freewheel hubs to be used safely for fixed-gear bicycles (as opposed to track hubs, which have a provision for a lockring) - hence the instructions are for installation rather than removal. Don't forget to use plenty of grease!
