That looks like a Phillipe steel adj. stem with the old style head set and fittings. Nice. I saw Lemoine ride back in '51 when I was racing amateur in Europe on my first trip. The race picture shown probably was for a 100 KM distance, otherwise no sustanence would have been on bike unless guys were riding in 100 degree plus heat. The usual motor pace runs were 3 heats totalling 70 to 100 K's. The smaller distances meant one could ride each heat without puckered lips. Lemon! Ugh! It would make my stomach sour, but every rider has to study their own body chemistry and eat / drink what agrees. The stuff in the wax paper might be celery, keeps moist and can be chewed for liquid and then spit out, keeping mouth moist. Some guys did it in road races. The little rectangles should be what was very popular with riders and people in general, called dextropur in Germany and sold all over Europe. It's a dextrose sugar wafer and one bit it off in pieces or chewed and drank water to wash it down and dilute. Maybe that's what the celery was for? Never saw that donein a pace race, but guys talked about it. I used, and all the guys used the dextopure in races and training on road, and of course a water bottle took care of the melting and swallowing. At first the health food stores had it and then all food places sold it. Championship and qualifiying events were 100 K type races and some riders had a bottle on bike, other guys road with nothing. By '58 when I got there things had been changing with training and nutrition advances. It's very tricky taking a hand off the bar at speed behind the big motors, it had to be done in a quick respite from top pace and hopefully any pacer behind would not see and try to attack when you grabbed a sip or whatever. Just a little insight from my experiences.
