Hi Doug, I'll be listening as well, as I've recently begun to work on a frame a fellow lister offered. Mine has cottered cranks, that seem to have been original. The rims are rusty chrome, I think 'Milremo' brands and HEAVY. The frame is 531 I'm sure, but components make me think it was a middle of the road model. The shifters are Huret

The seller also had a UO-8 bike in great shape (but way too small for me) - which may yield up the extra french things needed (bars, headset, etc).
