I've dabbled in painting over the years, and found various websites when I looked into using the HVLP system - but I can't recall the whole process of painting cycle frames ... ie from stripping to clear coat.

What I found most helpful was asking specific questions as I went along - but in addition to this list, I think I actually got more complete information over on the FrameBuilders list (link at: http://www.bikelist.org/ ). You might start by just searching the archives on the FrameBuilders list there. One professional who posts to that list, has GREAT information, and who writes really well thought out posts, is Doug Fatttic.
