You can remove the cleats if you prefer, but just leaving the straps slightly loose until you feel comfortable with the cleats is probably a better idea.

The problem with this is that any shoe with a stiff enough sole to be a decent cycling shoe will simply not walk like a sneaker.

Another option is to use a platform pedal like the Lyotard Marcel Berthet or (my current favourite for street shoes) the Campagnolo Triomphe.
