I have used the Grand Bois tires on old rims without hook beads with no problems. Yes, if you have a loose fit, then a folding bead may stretch a bit more, and may be more likely to blow off. From my experience, it is more important how tight the fit is.

However, there are some manufacturing tolerances in tires and rims. If you have an undersize rim and an oversize tire, you are in trouble no matter what. Trying a different tire from the same maker and model may solve the problem. I once had a Continental tire that kept blowing off. I took it back, and the bike shop said I must have installed in incorrectly. They showed me how, and boom, it blew off. They gave me a refund...
