The problem with high-quality 27" rims isn't the rims. The problem is that it's virtually impossible to find the panaracer pasela 27x1 tires with a folding bead, that would justify the investment in new 27" double-walled rims. And, nobody else makes good 27" tires, imho. If you had the rims made, you'd better stock the associated tires. I have several bikes that could benefit from 27" high-quality rims, but for the moment I'll use NOS vintage weinmann 219-type single-wall rims.
I think there is a need for a high-quality polished rim, 27" or 700c, with a traditional horseshoe profile, period. I don't think the MA3 / Open Sport / Open Pro fit this need. The Torelli Master probably died out because its outer ERD was so high that tires were too difficult to mount ...
