As long as you don't mind the increased rolling resistance from the higher-density greases as well as other potential performance reductions. (They are all very slight, if I remember all those early Phil Wood-related and Wheelsmith descriptions of the extra resistance of bearing seals, heavier greases, etc., from 35-plus years ago.)
I, too, hate the extra ratcheting and other noises associated with the more-modern drive trains and noisier wheels. Sew-ups on SC Arc-en- ciel rims with Campi hubs were my quietest (and highest-maintenance) wheels ever, but the high cost of new rims and tires beat me up during my cash-poor college years.
