The individual prices you have listed are eminently reasonable, and I have no doubt that you would get well over $2K for all of them if sold separately.
NR parts, even in NOS condition, are not too hard to find, so I would say that the least common part of this bicycle is the frameset. If the bike was built with difficult to find French components, it would be harder to justify, at least morally :), parting it. But that is not the case, and you've already gone above and beyond the call of duty to try to sell it complete, so I say part it.
You get to sell your stuff for a fair price; you get to put some much needed parts on eBay, which is a service to the vintage community; and you get to unwrap that time capsule, which must be a ton of fun. Part it.
