I'm not planning to completely recover, just glue back the cover where it has come loose around the edges, including one of the sides, which is very concave as you point out. Barge Cement has had the most recommendation, so I'll try to find out where to buy it.

Also, these saddles have very concave sides due to the wide rear part, so require more tension in the covering in the flap areas. Anyway, I was thinking of peeling back the covering from the flap in the wrinkled area and using some 3M Super 77 spray adhesive. The thing is, there is a layer of foam between the leather and the plastic base, so you don't want the adhesive dissolving the foam.
