I'd definitely keep my Raleigh Pro if I could only keep one. However, I'd cheat and keep around some extra components to swap in and out. I'd either keep another rear wheel with a planetary hub of some sort, with shifter and cable kept together in such a way that it would be fast and easy to replace my fixed wheel with; or I'd keep a multi-speed rear wheel with a wide range cassette and a rear derailleur with cable, housing, and bar end shifter all connected so that I could put it on, zip-tie it in place, and be ready to go. I'd also need to keep a trailer around so I wouldn't have to put a rack on the bike. Then I'd probably keep another chainring around, or maybe another crankset, and a front derailleur with its accompanying shifter bits so that if I wanted to go touring, I could spend a little more time on adjustments and actually have a double chainring. I've gone camping with the trailer on it as a fixed gear, but it makes a 80 or 90 mi day end up as a very hard ride! All that being said, if I could keep only one bike and only in one state (i.e, no extra bits to swap in and out), it would still be the Raleigh and it would probably still be fixed.
