Be careful with the mounting on the Jubilee rear. Some are made for Campy hangers but most are made for Huret hangers. I believe adapters exist as well. Also, be sure of the clamp diameter on the front changer as these can be French or Imperial. Plus, the front clamps are notorious for fracturing so take care when mounting. If you go with French cranks ascertain the pedal threads as many are French. Of course, all is fine if you use French thread pedals. Then there is always the French threaded headset and bottom bracket issue. In the course of scrounging French parts for my Franco/American McLean I saw many more French threaded headset and bottom brackets than English. Of course, that shouldn't be a problem for you. Oh, BTW, Mel Pinto does have the Delrin and resin Atax seatposts if you want to go that route. Many Francophiles on the list know much more than me, IE. Jerry Moos et al.
