I think there are many perspectives to this, I will just approach 2.

Weight may be the easiest thing to codify, sell, and verify and thus makes for a somewhat easier argument point for the neophyte and most expedient for the salesperson.

from my design standpoint, the makers and users of frames and components have made some interesting innovations in the name of weight including drillium, alloy investigation, and joinery modifications. My most recent discovery was an alleged track bike that Pino Moroni made in the 70's, a lugged titanium frame, that weighed 11 pounds.

Problem solving in designing functional objects is most inspirational in my opinion...
