I had Denver goatheads decimate (maybe 40 per tire) a set of Conti Sprinters years back, so I don't suspect the Servizio Corses will be better. I use them on my nearly on-topic Mondonico with GP-4 rims, and I think they are great for normal and training rides. One has gone flat, and I think it was a flaw rather than a puncture. I didn't have sealant. I haven't opened it up to find the problem.
For comparison to Tufo, I've also used some 220 g time-trial tires on it with Tufo sealant. While the ride was noticabley more supple, one of them went flat and the sealant did notstop it, even with several attempts to reinflate. Air was escaping around the valve, so I suspect it was a valve attach failure.
My area (Ann Arbor) is not prone to flats, IME. I would buy more S-Cs, but I like the 23 mm Vittoria Rally better (fatter, and have a Kevlar belt), and the unmounted look and feel of the Gommitalia Champion is very similar to that of old Vittoria Servizio Corse Squadre Prof. I haven't ridden them yet, so I can't say the promise is borne out.. Mainly I have enough cheap sew-ups to play with for a while.
