The u-bolts on the Minoura KOF handlebar mounts are plastic-coated and should not mar your HB or stem. I did replace the alloy acorn nuts with stainless ones however, after the alloy nuts failed during tightening. (The s/s nuts are deeper and engage more threads, too.)
I have never used the double-bottle mount adapters, but Loctite may be a good idea for rough-service applications and/or added commuting security.
