I've only done L'Eroica once, but my perspective as a tourist and commuter in hilly country may be helpful. The key is some steep gradients in dirt. I rode with about the widest tires my frame would accomodate, and still slipped on one hill. I also used a triple front, and found it got a workout as the day went on and I tired some. Just for the trip, I put on an SR clone of a Stronglight 99 - damned the authenticity, it got me up the hills. Afterwards, the Vent Noir reverted to its original Dura-Ace kit, and didn't complain.
What I like about the Windsor Pro is what I liked about the Vent Noir: not so rare or valuable that I worried about damage in transit. It was better to ogle than be ogled, eh?
But, your mileage (and age) may differ.
